Refreshing Kefir-Lentil Dip with Vegetable Sticks

Ingredients

  • Red lentils50 g
  • Kefir (natural)150 ml
  • Cream cheese (low-fat)50 g
  • Garlic clove1 piece
  • Fresh mint10 g
  • Lemon juice1 tbsp
  • Saltto taste
  • Black Pepperto taste
  • Cucumber100 g
  • Celery Sticks100 g

Preparation

  1. Cook the red lentils in plenty of water for about 10-15 minutes until tender. Then drain well and let cool.

  2. Peel and finely chop the garlic. Wash the mint, shake dry, and also finely chop.

  3. In a bowl, combine the cooled lentils, kefir, cream cheese, chopped garlic, mint, and lemon juice.

  4. Season with salt and pepper and mix well until a creamy consistency is achieved. If needed, add a little more kefir if the dip is too thick.

  5. Wash the cucumber and celery stalks and cut into bite-sized sticks.

  6. Let the dip chill in the refrigerator for at least 30 minutes to allow the flavors to develop. Serve with the vegetable sticks.

💡 Tip: For an extra spicy note, you can add some cumin or smoked paprika powder to the dip. Replace cucumber and celery with radishes or bell peppers for variety.
