Ingredients

  • Oat flakes (fine)100 g
  • Low-fat quark (0.3% fat)250 g
  • Vanilla protein powder (whey or casein)30 g
  • Egg white2 pieces
  • Baking powder1 tsp
  • Lemon juice2 tbsp
  • Lemon zest (organic lemon)1 tsp
  • Sweetener of choice (e.g., erythritol, stevia)to taste
  • Water or plant-based milk (unsweetened)50 ml

Preparation

  1. Preheat the oven to 180°C (350°F) top/bottom heat and line a small baking dish (approx. 20x15 cm / 8x6 inches) with parchment paper.

  2. Add the rolled oats, quark, protein powder, egg whites, baking powder, lemon juice, lemon zest, and sweetener to a bowl.

  3. Add the water or plant-based milk and mix all ingredients thoroughly to form a smooth dough. Make sure there are no lumps.

  4. Spread the dough evenly in the prepared baking dish and smooth the surface.

  5. Bake the slices for approx. 25-30 minutes, or until golden brown and a toothpick comes out clean.

  6. Let the baked slices cool completely in the dish before cutting them into portions. They taste especially good chilled.

💡 Tip: For an extra fresh touch, you can use some low-fat lemon yogurt as a topping after baking. Prepare a larger batch and store the slices in the refrigerator for several days.
