Ingredients

  • Low-fat quark250 g
  • Chocolate protein powder (whey or casein)30 g
  • Unsweetened cocoa powder10 g
  • Erythritol or Xylitol (to taste)15-20 g
  • Unsweetened almond milk50 ml
  • Vanilla extract1/2 tsp
  • Chopped almonds or cacao nibs (optional)10 g

Preparation

  1. Combine the fat-free quark, protein powder, cocoa powder, sweetener, almond milk, and vanilla extract in a bowl.

  2. Whisk all ingredients thoroughly with a whisk or hand mixer until a smooth, lump-free cream forms. Ensure the protein powder is completely dissolved.

  3. Taste the mousse and adjust sweetness as needed.

  4. Spoon the mousse into small serving bowls or silicone molds (e.g., muffin molds).

  5. Place the bowls/molds in the freezer for at least 2-3 hours, until the mousse is firm but still creamy.

  6. Optionally sprinkle with chopped almonds or cocoa nibs before serving.

💡 Tip: For an even more intense chocolate flavor, you can add a pinch of salt. If you don't have almond milk on hand, water or unsweetened soy milk also works.
