Ingredients

  • Salmon fillet150 g
  • Quinoa, uncooked60 g
  • Baby spinach50 g
  • Frozen berry mix (e.g., raspberries, blueberries)80 g
  • Avocado0.5 piece
  • Olive oil1 tbsp
  • Lemon juice1 tbsp
  • Turmeric, ground0.5 tsp
  • Saltto taste
  • Pepperto taste

Preparation

  1. Cook quinoa according to package instructions and let cool.

  2. Season salmon fillet with salt, pepper, and half of the turmeric. Fry in a pan with a little olive oil for 3-4 minutes per side, until cooked through. Alternatively, bake in the oven.

  3. Wash baby spinach and place in a bowl. Add the cooked quinoa.

  4. Halve the avocado, remove the pit, scoop out the flesh, and slice. Add to the spinach and quinoa.

  5. Add the thawed frozen berries to the bowl as well.

  6. For the dressing, mix the remaining olive oil with lemon juice, the remaining turmeric, salt, and pepper. Pour over the bowl.

  7. Place the fried salmon on the bowl and serve immediately.

💡 Tip: For an extra flavor note, you can add roasted pumpkin seeds or chopped walnuts. Fresh mint or cilantro also pair wonderfully.
